Our third and final farm visit was to Garden Variety Cheeses, run by Rebecca King . . and YUM! Great way to finish the day
Garden Variety Cheese is a small farmstead cheese business, based on 40 acres in Northern Monterey County. Rebecca began commercial milking and cheese production in March 2009, and started selling three varieties of raw sheep cheeses at Santa Cruz farmers markets in June 2009. Their sheep produce lovely, rich sweet milk that makes fabulous cheese.
The memorable things that came out of this visit (apart from the cheese) were
- sheep milk has twice the solids of cows or goats milk, which makes it really good for cheese!
- really really hard to get organic rennet and it costs a fortune . .
- Rebecca was one of a number of people to mention the excellent work of FarmLink (see later post)
